The Foodie Hub was invited to the media launch of the Italian Masters Cooking Classes at the Accento showroom in Claremont in conjuction with the Italian Chamber of Commerce and Industry. It was to provide a preview of what is to come, and they start Monday 20 May with legendary Italian chef Giuseppe Pagliaricci of Perugino’s.The following is some photos from the night, information on the classes and some insight into what will make them special.

Western Australia’s pedigree Italian chefs will share their secrets to perfect Italian dishes in a unique series of master classes. Six Italian chefs, all awarded the Italian Government’s quality seal, Ospitalità Italiana, will each showcase their cooking techniques to a select number of students. I wasn’t aware of the Ospitalità Italiana and found the following information about it interesting:

• 2011 was the first year that Italian restaurants in Australia were considered for Ospitalità

The Italian Government’s only official quality seal, Ospitalità Italiana, has strict criterion that
restaurants must meet, such as the presence of Italian speaking staff, at least half of the
menu to consist of traditional Italian dishes with the names written also in correct Italian,
and the use of products of Italian origin.

Crostini with Italian Sausage and Cheese

Starting from 20 May, the six-part Accento Italian Cooking Series will cover contemporary and classic dishes such as Risotto Milanese Arancini (baked risotto balls), Beef Short Ribs with Truffle Essence, Cointreau Zabaglione, and Limoncello Mousse.

Italian Chamber of Commerce and Industry Secretary General Marco Mari said that the cooking demonstrations take place in an Italian designed kitchen and include the use of some of Italy’s finest imported products from European Foods, Gusto Italia and Single Vineyard Sellers, together with Terranova fresh meat.

“We, as diners, are the ones that benefit from having chefs of this calibre in our city,” Mr Mari said.
“Patrons who dine at restaurants awarded Ospitalità Italiana can be sure they will receive an authentic Italian gastronomic experience.” He said he was thrilled to include newly awarded chefs Luca Galaverna of Italians, Matteo Maretti of Maretti Caffe’ Cucina to the already impressive list of Perth-based Italian chefs.“The masters of Italian cuisine are not readily accessible – this is the perfect opportunity to learn from the best in the business as recognised by the Italian Government.

“Guests will learn techniques and specific Italian dishes, and they will also taste all the dishes and sample matched Italian wines, so we advise guests to come along with an empty stomach!”

For the wine aficionado, varietals on offer include Barolo, Chianti Classico, and Nero D’Avola Syrah from the respective esteemed wineries Michele Chiarlo (Piedmont), SanFabiano Calcinaia (Tuscany), and Fuedo Arancio (Sicily) to name a few.Mr Mari said the series is designed to be informative and fun. “For the same price as eating out at a good restaurant, guests have the added bonus of taking home new skills, making it exceptional value for money.”
